Salumi SAP – Salumificio Artigianale Pavullese was founded in 1973 in the heart of the Modenese Apennines and has grown into a benchmark for Italian cured meat excellence. The range is divided into two distinctive product lines:
- Voglietta, a creative selection of 11 varieties designed for aperitifs and brunch, including Voglietta Dolce, with fennel seeds, Super Piccante with Habanero, Aglio di Voghiera DOP, Ubriaca with Lambrusco DOCG, and game recipes featuring wild boar, venison, and roe deer.
- CuorEmilia, deeply rooted in local culinary traditions, offering classic salami (shoulder, prosciutto trimmings, pork jowl), cured “passite” and sliced meats, hand-tied pancetta and coppa, aged prosciutto (also deboned or culaccia), as well as cotechino, zampone, pork shanks, and head cheese. The line also features typical Modenese spreads such as Pesto della Nonna and Lardo Montanaro.
